15 minutes I Makes: 8 servings
- 3 cups or 2 cans of drained garbanzo beans
- 1 cup of beets, peeled and cubed
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 2 Tablespoons garlic, minced
- 1 Tablespoon ground cumin
- 1/2 cup water
- Salt and pepper to taste
- Peel the beets.
- Boil beets until you can easily mash them with a fork.
- Combine all ingredients in blender until smooth.
- Serve with cut up fresh vegetables.
